How was the Okinawa-specific diet established?

Because of the distance between Okinawa and the mainland Japan, Okinawa was once an independent kingdom called Ryukyu Kingdom. Throughout the history of Ryukyu Kingdom, the traditional Okinawan diet had been established locally with little influence from the traditional Japanese cuisine. It is composed primarily with vegetables, fish, shellfish, seaweeds, etc. which are harvested or caught locally.
